Black Bean Salsa Empty
PostSubject: Black Bean Salsa   Black Bean Salsa EmptyFri Jan 12, 2007 12:15 pm

This is a yummy black bean salsa. It is from a rachel ray cookbook. and everything in it is free for all of us dieters.
1 can (15 ounces) black beans, drained
1 plum tomato, seeded and chopped
3 tablespoons finely chopped red onion
1 jalapeno pepper, seeded and finely chopped
1 clove garlic, finely chopped
juice of 1 lime
A few dashes hot sauce, to taste
salt to taste
chopped cilantro (optional)
1 bag of tortilla chips
In a medium bowl, mix black beans, tomatos, onions, peppers, garlic, lime juice hot sauce and salt. Garnish with cilantro (optional). Serve with the chips or fancy veggies.

The chips are the only fattening thing. Duckijo told me that it is good on chicken and my hubby just tried it with pork chops and liked it.
