Grapefruit juice

Do ya have anything to make with grapefruit juice? Besides the obvious vodka and grapefruit!

FRESH GRAPEFRUIT CAKE

2/3 c. butter
1 3/4 c. sugar
2 eggs
3 c. cake flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. fresh grapefruit juice
3/4 c. milk
1 1/2 tsp. vanilla extract

In a large mixing bowl, cream butter and gradually add sugar; beat well. Add eggs, one at a time, beating well after each addition. Sift together flour, baking powder and salt, add to creamed mixture alternately with grapefruit juice, beginning and ending with flour mixture. Gradually add milk and vanilla; mix well. Pour batter into 2 well greased and floured 9" pans. Bake at 350 degrees for 30 minutes.

GRAPEFRUIT CIDER MIST

3 c. chilled grapefruit juice
1 c. chilled apple cider
2 (12 oz.) cans ginger ale (3 c.)
Chilled lime slices
Maraschino cherries

In large nonmetal pitcher, combine grapefruit juice and cider. Just before serving, add ginger ale. Serve over ice; garnish with lime and cherries. Makes 6 (1 cup) servings.

GRAPEFRUIT PINEAPPLE SHAKE

2 c. Ocean Spray grapefruit juice, chilled
1 can (8 oz.) crushed pineapple, packed in its own juice
1 1/2 c. vanilla ice cream

In a blender container, combine grapefruit juice, pineapple and ice cream. Blend on high speed until smooth and frothy. Makes 6-8 servings.
