The tag DOES smell like coffee. If you are making it to give to someone ... then I'd make it just before sending it. Remember it is a scratch and sniff card .... so lightly scuff w/finger to reactivate aroma. Also, if you use coffee you should use UTEE instead of embossing enamel due to the size of the coffee grains.
