Chicken Salad

I need a really kick arse recipe for CHICKEN SALAD!!!!

You know the gourmet kind ... I'm tired of buying it and want to make my own. Somebody please help!

Recipe for simple luncheon chicken salad with celery and mayonnaise and hard cooked eggs.

INGREDIENTS:

• 2 cups cooked cut-up chicken
  
• 1 cup chopped celery
  
• 1 tablespoon lemon juice
  
• salt and pepper to taste
  
• 1/2 cup mayonnaise, or as desired
  
• 2 hard-cooked eggs, chopped
  

PREPARATION:

Toss first 5 ingredients together, adding enough mayonnaise to moisten to desired consistency. Fold in chopped eggs. Serve on lettuce leaves and garnish as desired.
Serves 6.

I'll use that as my base. I've seen it with grapes, onions and other stuff ... I can add those and experiment!
